1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Roll out the pre-made pie crust on a lightly floured surface. Using a sharp knife or pizza cutter, cut the pie crust into rectangles of your desired size (typically around 3x5 inches).
3. Place a spoonful of strawberry or blueberry jam or preserves in the center of half of the rectangles, leaving a border around the edges.
4. Brush the edges of the filled rectangles with beaten egg.
5. Place a second rectangle of pie crust on top of each filled rectangle. Press the edges together with a fork to seal. Use a fork to poke a few holes in the top crust to allow steam to escape.
6. Transfer the assembled pop tarts to the prepared baking sheet.
7. Brush the tops of the pop tarts with the beaten egg for a golden brown finish.
8. Bake in the preheated oven for 15-20 minutes, or until the pop tarts are golden brown.
